This is one wine that deserves to be taken seriously. Using some of the estates top Pinot Noir parcels, the wine then spends at least 45 months on the lees, developing rich flavours and well integrated fine bubbles.
You’re met with a great mixture of baked orchard fruits and waxy lemon peel, this turns into a very interesting blend of savoury toastiness and baking spices. The finish goes on and on leaving you satisfied and excited for the next sip.
Pair with a top English soft cheese or a lovingly made mushroom risotto.
